Fryday is normally fish and chips night but mid way through crumbing snapper fillets in panko crumb, I went OH NO! and realised I have no potatoes. So here we have: "Fryday snap(per) decision noodle curry bowl"
Coat 4 snapper fillets (if they are large cut 2 in half) through seasoned cornflour.
Then dredge through beaten eggs.
Then crumb with panko crumbs (I mix normal breadcrumbs and panko crumb together)
Shallow fry until golden.
Set aside and keep warm.
Meanwhile soften noodles of your choice. I used bean vermicelli, because I had some in the pantry.
Empty a jar of Saucy Wench Lemongrass Tamarind Sauce into a saucepan.
Heat up until simmering. Add a can of coconut cream (400ml) and then add half a can of water to wash out the coconut cream can.
Heat until simmering and add salt to taste. Simmer for about 10 minutes, stirring occasionally.
Plonk the noodles in a bowl, arrange the fish on top, spoon over the yummy broth, and garnish with whatever vegetables you have. I used cucumber, and eschallots, but it would have been delicious with bean sprouts or cherry tomatoes, or cooked broccoli, cauliflower and green beans.
I actually enjoyed it more than fish & chips!!
