Son-in-law eggs

A classic Thai dish, made easy.

Legend has it that, to impress his difficult Mother-in-Law (cue Crazy Rich Asians classic mother-in-law line "You will never be good enough"), a Thai chef, at his wits' end, despite cooking the most delicious and impressive dishes in all of Thailand, decided to cook a simple meal of boiled eggs in a delicious sauce.

This was the dish which won over his Mother-in-Law and was forever known as "Son-in-Law Eggs"


An easy recipe with Saucy Wench Chilli Jam & Lemongrass Tamarind Sauce.

Hard-boil 6-8 eggs, then peel.

Add a good amount of oil to a fry pan and fry the eggs, rolling it round the pan until the outside blisters and browns.

Remove the eggs from the pan onto a plate.

Pour out most of the oil in the pan, then fry together 2 chopped spring onions, 1 tbsp Saucy Wench Chilli Jam, 1 tbsp Saucy Wench Lemongrass & Tamarind Sauce, 1 tbsp palm sugar or raw sugar, 1 tbsp fish sauce & the juice of 1/2 a lime until thick & syrupy.

Pour the sauce all over the eggs and garnish with coriander.
